At Espirito Santo, we believe that bastes, marinades,
rubs and finishing sauces are the foundation of cooking
good meat. They transform ordinary meats into grilles
of the highest distinction. They are the essential seasonings
that give grilled fare the character, personality and
very soul. They are the best kept secrets of our butchers.
If there is a secret in a good roast, this is where
the fine prints are found. |

Basil, Dill, Oregano, Rosemary, Sage, Parsley, Thyme,
Tarragon, Marjoram, Chives Onion and Chervil. Herbs
are non-woody plants mostly grown from seed and used
as flavorings in cooking or traditional medicine. The
used of herbs in the kitchen is ruled by culinary tradition
and every cuisine has its favorite herb. These are the
very same herbs we use in the preparation of our marinades.
Fresh herbs are also picked as they begin to flower,
when their flavor are at their strongest. Slowly dried
in an oven and packed in airtight packages, these are
the ingredients which bring out the core flavor of any
cuisine. |

Rub into the surface of any meat an hour before grilling,
broiling, pan-frying or baking. Rubs are mixes of spices,
herbs, seasonings that are used to give a base flavor
to meat. Our collection includes a range of international
and Latin American dry rubs and marinades, the same
ones which our butchers marinate your meat with. These
house premixes are now made available to our customers.
