Cold cuts refer to the curing, drying, salting and
smoking of meats. Early in history, it was discovered
that meat would keep for an extended period if the moisture
content is reduced. So a regular supply of meat became
available without refrigeration. Eventually, they evolved
into the staple part of our diet as Ham, Bacon, Pastrami,
Parma or Salami. At Espirito Santo, we carry more than
30 cold cuts of the most premium quality.
